Dr. L. Preston Mercer graduated with a B.S. in Chemistry from the University of Texas and a Ph.D. in Biochemistry from Louisiana State University in Baton Rouge. He was an NIH Post-Doctoral Fellow at the University of Alabama-Birmingham, College of Medicine in Nutritional Biochemistry. He then spent 19 years in medical education in Alabama and Oklahoma, being on the founding faculty of two medical schools and one dental school, including being Chair of Biochemistry and Associate Dean of Biomedical Sciences. He served as Chair of the Department of Nutrition and Food Science at the University of Kentucky. Dr. Mercer is an elected member of both the American Society of Biochemistry and Molecular Biology, and the American Society of Nutritional Sciences. He is a Fellow of the American College of Nutrition and was a board member of the Certification Board for Nutrition Specialists. Dr. Mercer has received numerous honors and awards, has over 140 articles in scientific publications and books, and memberships on editorial boards of professional journals. He has trained 65 students in his laboratory. For five years, he served the United Nations Third World Academy of Science as a Visiting Professor in Science and Sustainable Development to the Department of Nutrition, National Research Center, Giza, Dokki, Egypt. Dr. Mercer has spent 25 years in higher education administration and from 1999 to 2007, served as Campus Executive Officer for USF Polytechnic. Dr. Senay Simsek is an associate professor in the Department of Plant Sciences at North Dakota State University (NDSU). She earned a B.S. degree in Chemistry in 1998 and MS degree in Biochemistry from GebzeInstitute of Technology. Then, she began her PhD in Food Science at Purdue University in 2003. She completed her PhD in December 2006 and started working as an assistant professor at NDSU in January, 2007. Her research focuses on the on structure function relationships among bio-macromolecules (particularly, starch and non-starch polysaccharides) found in food systems. Also, she works on plant metabolomics to study plant physiology, grain quality and processing, and the nutritional aspects of grains. She has authored/co-authored more than 50 peer-reviewed journal articles. She is an active member of the America Association of Cereal Chemists and Institute of Food Technologists. Also, she serves on the technical board of the Wheat Quality Council. In 2011, She was awarded the Larson/Yaggie Excellence in Research Award 2011 by the NDSU College of Agriculture and the Early-in Career Award of Excellence during the U.S. Quality Grains Research Consortium annual meeting. Currently, his group is investigating the mechanism of food metabolic toxicity and nutrition imbalance in vascular disorders, oncogenesis, and fatty liver and other metabolic diseases, as well as the nutritional regulation mechanism of several classes of bioactive functional carbohydrates and flavonoids. Another important emphasis of Dr. Yang’s research is on enhancing health-promoting efficacy of bioactive food ingredients by improving their bioavailability. Professor Ciclitira was an undergraduate at St Bartholomew’s Hospital qualifying in 1971. He undertook a House Physician post at Rochford Hospital, Essex followed by House Officer post at St Bartholomew’ Hospital London. He worked as a Senior House Officer in General Medicine and Rochford Hospital Essex and as a Junior Registrar on the medical unit at St Bartholomew’s Hospital London. He worked as a Senior House Officer at The Royal Marsden Hospital Surrey followed by a Medical Registrar post at Addenbrooke Hospital Cambridge. He completed postgraduate qualifications including an MD and PhD at The MRC Laboratory of molecular Biology Cambridge. He was accredited in General Internal Medicine and Gastroenterology in 1982. He worked as a Senior Registrar at Adenbrooke Hospital, Cambridge, and Guy’s Hospital London. He was appointed Consultant Physician and Gastroenterologist and Senior Lecturer in medicine at St Thomas’ Hospital (UMDS) in October 1983 and Professor of Gastroenterology (KCL) in 1994. His Ciclitira is the author of over 250 clinical and scientific publications and lectures regularly worldwide. He is the author of British and American Guidelines for treating coeliac disease. He was awarded the British Society of Gastroenterology research medal in 1982, The UK and Eire Lilly Gastroenterology Award in 1988, the European Society award in 1989 and the Norman Tanner Gastroenterology Medal by St George’s Hospital in 2000. He was jointly awarded a research award by the Institute of Technology of the German Government 2000 to develop variants of wheat, barley and rye that are non toxic to the patients with coeliac disease but retain the nutritional and baking qualities of the original cultivars. Dr. Frank Thies graduated in animal Physiology from the University of Burgundy (France) in 1987 before undertaking a PhD in Nutritional Physiology, also at the University of Burgundy and awarded in 1991. Dr. Thies then completed a 3 year Postdoctoral Fellowship at the National Institute of Health (Bethesda, USA) before joining Prof Philip Calder's group within the Department of Biochemistry at Oxford University where he studied mainly the effects of dietary polyunsaturated fatty acids on immune function in the Elderly. In 1998, he moved to the University of Southampton to work on the effects of polyunsaturated fatty acid supplementation on atheromatous plaque stability in atherosclerotic patients. In 2001, Dr. Thies was appointed as a lecturer in Human Nutrition at the University of Aberdeen, and was promoted to senior lecturer in 2005, and Reader in 2013. Research Interest

Dr. Heidi J. Silver is a research associate professor of medicine in the Division of Gastroenterology, Hepatology and Nutrition at Vanderbilt University in Nashville, TN. She earned her B.S. in Speech and Hearing Science at the University of Massachusetts – Amherst and her M.S. and Ph.D. in Nutrition at Florida International University. Dr. Silver is a member of the Academy of Nutrition and Dietetics and has been a Registered Dietitian providing medical nutrition therapy and weight management for 25 years in community, hospital, home health and nursing home settings.She is Director of the Vanderbilt Nutrition and Diet Assessment Core Lab, within which she trains and supervises a team of registered dietitians and research assistants who perform diet and nutrition assessments, nutrition education, nutrition counseling and nutrition therapy in clinical trials. Dr. F. Javier Moreno, holds his PhD degree in Spain (IFI, CSIC) complemented with a pre-doctoral stay at France (INRA) which allowed him to gain knowledge and experience of dairy O-glycoproteins and O-glycopeptides, and of a wide range of chromatographic and electrophoretic techniques to characterize and identify these biomolecules. Since June 2007, he is working at the Instituto de Investigación en Ciencias de la Alimentacion, CIAL (CSIC-UAM) with a permanent position as Tenured Scientist and one of his current research lines is the enzymatic synthesis of new bioactive oligosaccharides and the development of new analytical methods for their structural and functional characterization. Danijela Ristic-Medic is a medical doctor, specialist of internal medicine, with MSc and PhD in nutrition and metabolism. She works at University of Belgrade, Institute for medical research in Centre of Research Excellence in Nutrition and Metabolism. She is a scientist who is actively engaged in basic, clinical and epidemiology nutrition research, with focus on nutritional habits and nutritional status assessment, diet therapy, fatty acid profile in serum and erythrocyte as a biomarker of dietary intake, with background in defining the role of fatty acids in health and disease. The iodine intake-biomarker and health outcome with meta-analyses relationship is also part of research interest.
